Raw Cacao Dark Chocolate

If you go through a day and never eat dessert, did that day even happen? These are the questions. If you’re like me and scavenge for something sweet right after lunch or dinner, you have to try out this super easy raw cacao dark chocolate recipe! I would always grab a few bars of dark chocolate out of habit every time I’d go grocery shopping, until I started making it at home. There are some brands that sell quality ones with clean ingredients, but majority of chocolates commonly have refined sugars and soy lecithin in them. They’re also usually made with cocoa powder or liquor versus raw cacao, which has greater nutritional benefits. I use raw cacao powder for this recipe which is a strong source of antioxidants, energy, magnesium, and other micronutrients. I love the raw cacao from Navitas Organics. I’ve tried out other brands, but I’ve found that Navitas provides the best flavor and quality.

This recipe seriously takes about 10 minutes to make, will satisfy all your chocolate needs, and is easily customizable. Plus, there’s something cool about making your own chocolate — try it out!

Raw Cacao Dark Chocolate

Yield: 4 servings

Ingredients:

1 cup raw cacao powder

⅓ cup + 1 tbsp. coconut oil

1 tbsp. raw honey or maple syrup

¼ tsp. organic vanilla extract

pinch of cinnamon

¼ cup almonds, slivered or chopped

⅛ tsp. pink himalayan sea salt

Other Stuff You’ll Need:

small saucepan

parchment paper

medium baking sheet

Directions:

  1. In you saucepan, pour the cacao powder and coconut oil. Turn the heat on low, and stir until a smooth chocolate sauce has formed, and no clumps remain.
  2. Add the honey, cinnamon, and vanilla and stir until everything is well combined. Turn off the heat.
  3. Place parchment paper on baking sheet, then pour the the chocolate mixture on the parchment. The mixture should be liquid enough to spread thin on its own.
  4. Sprinkle the almonds and sea salt on top, then place in the freezer. It will freeze up fairly quickly, and should be ready to eat in 7-10 minutes.
  5. Once the chocolate has solidified, break it up into pieces. Store it in an airtight container in your freezer. Enjoy!
